When it’s cold outside and you want something to warm you up, Auntie Prue’s Kimchi stew recipe will do just the trick. To preface this, I am not Korean, but a lot of Filipino stews are similar to this delicious Korean dish. I’ve been actively trying to eat healthier and add probiotics to my diet. Probiotics, like kimchi, are good for clearing skin and getting rid of acne. This stew is so good and easy to make that we have it just about every other week. Filled with tofu and any vegetable you’d like, it’s healthy and flavorful. Plus, Nick likes it! Since this is a family recipe, eating Kimchi Stew always reminds me of home and happy memories. HEALTHY KIMCHI STEW RECIPE
Serving size: 2 people
INGREDIENTS

1 white onion

2 packets kimchi (mild or spicy, but I recommend spicy 🌶)

Vegetable or chicken broth

2 containers silken tofu

1 head of broccoli*
*You can add whatever vegetables you’d like! Depending if we have okra, green beans, or cauliflower in the fridge – we’ll add those to this recipe too.
🔑 But the KEY is SILKEN tofu, because it’s softer and makes a big difference in the taste of the stew. (close up image below of the silken tofu container)
HOW TO MAKE IT

Chop onion & sauté in a pan on medium heat until they are golden yellow with a pinch of salt & pepper.

Take a pot and add the onions you just sautéed along with any vegetables you’d like – like broccoli, both packets kimchi, silken tofu, and broth. (You can add more or less chicken broth depending on how “soupy” you want your stew to be.)

Stew over medium heat for 25-30 minutes with lid on the pot.

Serve over white rice and enjoy!
